Q: How long have you been in the Food & Beverage Manager role? Tell us about your career background, or any career highlights prior to Mr. Good Guy.
I began my journey with Mr. Good Guy when it first opened in October 2022, initially as a Food & Beverage Supervisor. Recently, I was promoted to the Manager role, where I provide support to our Food & Beverage Manager and our exceptional team.
My career in hospitality commenced at the age of 16 as a waitress at the Black Buffalo Hotel, where I formed lifelong friendships. I continued to gain experience working in cafes, pubs, and hotels around Hobart. At 23, I made the decision to move to Devonport, where I spent 6 years working in retail while also exploring opportunities in Aged Care. However, my passion for hospitality eventually drew me back, and I returned to working in local hotels. I have thoroughly enjoyed every step of my hospitality career.
Q: When you were younger, who inspired you to become a food & beverage manager and why?
My biggest influencers on my career path in hospitality were my first hotel manager at the Black Buffalo, Carol Sice, and Penny Rushton, Operations Manager of the Southern Lights Hotel. I vividly remember being 16 and thinking of Carol as royalty because everyone knew her, and she knew them all by name. I aspired to be the person whom people recognised when they walked into the venue I was working, creating that personal connection. Carol taught and inspired me from ground zero to the point where regulars started to know my name, and I knew the guests by theirs.
Working at Southern Lights, Penny always exuded a cool, collected vibe that permeated every workday. Her visionary outlook made perfect sense to me, and her individuality inspired me to embrace my own identity. Penny instilled in me the values of trust, respect, and commitment. Those lessons have been instrumental in shaping who I am today.
Q: The drinks list at Mr. Good Guy has a lot of Asian influences. What is your favourite tipple on the drinks list and what dish would you enjoy it with?
Since the inception of Mr. Good Guy, I’ve been particularly thrilled about our unique take on the classic espresso martini, affectionately named ‘Good Morning Vietnam’. This delightful concoction, with its special twist, impeccably complements the vibrant flavours of our South East Asian cuisine. You’ll often catch me savouring this drink, seamlessly paired with almost anything from our menu. It especially shines alongside our latest dessert, the Kueh Dadar Pandan Flavoured Crepes. Make sure to give it a try on your next visit – it’s a delightful experience you won’t want to miss!
Q: What is your favourite dish on the Mr. Good Guy menu and why?
Personally, my absolute favourite on the Mr. Good Guy menu is our Vietnamese Caramelised Pork Belly and Prawns. Why? It’s a luscious blend of fresh produce, coupled with a sticky bell pepper sauce, served on a sizzling hot plate! I have a soft spot for pork belly, and this dish is a beautiful twist on a classic.
Q: When you’re off work and looking for a great feed, what are your favourite foodie/drink hot spots in Devonport? Where do you hang out?
I enjoy grabbing coffee at Fundamental Espresso, a cosy little café in the neighbourhood. But on most days off, you’ll find me at the Alexander, our local pub. There, my family and I relax with a cold beer, watching the trains, planes, and mainly boats/ships arriving at the port.
Q: Where would you love to travel next to try the food?
I have so many places on my bucket list, but my heart is set on the United States. I want to experience the culinary delights of New York, Las Vegas, and all the small towns in between. I can imagine myself at a classic American diner, sampling all sorts of delicious pies. Can’t wait!
